Biography

Dr. Simsek is professor and head at Department of Food Science at Purdue University. She is also a faculty member at Whistler Center for Carbohydrate Research at Food Science Department, Purdue University and, adjunct professor at University of Puerto Rico-Mayaguez. She completed her PhD degree in Food Science from Purdue University in 2006. She has a BS in Chemistry and MS in Biochemistry. To date, she has advised 10 PhD and 30 MS Degree students, and hosted more 20 visiting scientists from 10 different countries.

Research Area

Dr. Simsek has authored and co-authored hundreds of research papers, and conference contributions in the area of wheat quality, mycotoxin analysis and carbohydrate chemistry. Dr. Simsek’s research focuses on four major areas: (i) polysaccharide structure and molecular interactions in cereals, (ii) starch chemistry, analysis and digestibility, (iii) application of HPLC, GC-MS, UPLC, LC-QTOF and NMR in structural studies of carbohydrates and polysaccharides, and (iv) improving wheat quality.
